Vegetable Sandwich Filling or Spread

With a couple slices of hearty wheat bread and a slice of lettuce, this makes an excellent meatless sandwich.  It is also excellent as a spread for whole grain crackers. 

1/4 c. chopped celery

1/4 c. chopped onion

3/4 c. chopped carrots

1/4 c. chopped radish

1/4 c. shredded seeded cucumber

1 – 8 oz package cream cheese or cottage cheese, drained and blended.

1 Tbl lemon juice

dash of pepper

Put vegetables in a strainer and drain well.  Squeeze them slightly and then let them sit for 15-30 min.  Squeeze them again to be sure you get them quite dry.  Beat cheese and lemon juice, add pepper, and stir in veggies. 

For more spice, you can add 1/4 c. chopped bell pepper and/or a dash or two of dill weed
