Mandie’s Egg McMuffins

My kids love McDonalds- who doesn’t??  We make Egg McMuffins at home quite often and they are pretty close to old Ronald himself’s version.  I’ll share how to make them as close to his as possible and how I make them slightly healthier.

The recipe: 

For each person you need:

Sour Dough English Muffin

1 egg

1 slice ham lunchmeat

1 slice colby cheese (for McD’s version you must use Kraft Singles or similar)

Margarine (for McD’s version only)

salt and pepper

If your kids preferred the “scrambled egg” style McMuffin that some McD’s serve, you crack one egg into a bowl and beat it with a fork to combine the white and yolk.  Pour this onto a preheated skillet that has been sprayed with oil.  It will likely spread all over so you have to let it cook a minute or less and then scoop it together to make it approximately the size of the muffin.  Otherwise, just fry up broken yolk eggs as usual.   Be sure to sprinkle some salt/pepper on.

While frying the egg, toast the muffins in the toaster set on the dark setting.   They need a little longer than standard bread.

When you have flipped the egg to cook the second side, throw some ham in the skillet and warm it  up on both sides.  When the egg is nearly done, throw that slice of cheese on it and top with the ham.  When the cheese starts to melt, transfer the stack to a muffin.  For McD’s version, you must drench the muffin in plenty of margarine prior to adding your egg, cheese, and ham stack.  Enjoy!!
