Pumpkin Roll

3 eggs
1 c. sugar
2/3 c. canned pumpkin
3/4 c. flour
1 tsp baking powder
2 tsp cinnamon
1 tsp ginger
1/2 tsp salt

Combine eggs, sugar, and pumpkin in mixing bowl until well-blended. Combine dry ingredients separately and then stir them into the pumpkin mixture. Spread into a greased and wax-paper lined 10×15 jelly roll pan (cookie sheet with edges on it). Bake 375^ for 15 min. Remove from pan by loosening the edges of the waxed paper and pulling straight up with the “hang over” from the wax paper. Cool 15 min. Place cake upside down on a clean towel, peel the waxed paper off and cool 10 min. longer. Roll up the cake with the towel and set aside. (yes, roll them both up together) Set this aside to cool completely while you make the filling.

The filling:
8 oz cream cheese
4 Tbl butter
1 c. powdered sugar
2 tsp vanilla

Beat this well until smooth and yummy.

Unroll the cake carefully and separate from the towel. Lay the cake on a nice size sheet of plastic wrap and spread the filling on to the cake as evenly as you can. Roll up just the cake, leaving the plastic wrap laying flat on the table. Lay the cake seam side down on the plastic wrap and wrap up the cake like a tootsie roll. Make sure the ends are sealed or they will dry out (you might need extra plastic wrap). Chill in fridge for 2 or more hours. Slice to serve. Serves 8-10.
