Hot Chicken Salad

A staple at my house growing up was Creamed “stuff” on toast. Mom’s meals in minutes included Creamed Tuna, Creamed Eggs, Creamed Dried Beef, etc. I love that sort of stuff!! This recipe is NOT creamed chicken but a fancier, dressed up version of the infamous creamed stuff on toast. This recipe is more like chicken salad but it is warm and served open-faced on biscuits or toast. Hope you like it as much as me!

The Recipe:

1 c. chopped, leftover chicken or turkey
1 Tbl butter
1 Tbl water
1/4 tsp salt
dash pepper
dash or two of celery salt
dash or two of dill weed (Optional)
1 Tbl lemon juice
1/3 c. mayonnaise
2 hard-boiled eggs, chopped
1/2 c. diced celery

Heat first 3 ingredients on low until heated through. Add remaining ingredients just before serving, while heat is still on. Once stirred in, remove heat and spoon onto biscuits or toast.
