Pizza “Muffins”

A while back I was in a hurry, had barely enough clean counter space available to merely think about supper let alone actually prepare something. The boys had been begging for pizza and I didn’t want to drag out the pans and shred the cheese, etc. I had recently made some muffins for a girlfriend having surgery and my muffin tins were still on the counter waiting to get put away. So, this is what I did!

Pizza “Muffins”

1 batch pizza dough (enough for 2 thin or 1 thick crust pizza)- unbaked but ready to use
Pepperoni and Ham cut into “lunchable” size pieces
Cheese- cubed or shredded
Parmesan
Pizza Sauce (optional)

Muffin tins for 12 muffins

Grease the muffin tins. Grab a pieces of dough about the size of your thumb and throw into the bottom of each tin. It should be enough to cover the bottom but you do NOT need to press it into place. (The nice thing about bread dough is it rises to fill in the crevices. . . Anyway. . . ) Next throw in 2 pepperonies or similar amount of ham (or whatever pizza toppings you want). Then throw in a cube or two (or couple pinches of shredded) of cheese. Next add another piece of dough on top dividing up equally to all the muffins. Turn your oven on to 350^ – 375^. Sprinkle some parmesan onto each muffin and sit the tin on top of your stove (near the exhaust vent is best) while it preheats. The muffins are ready for the oven when the dough has filled in the crevices and started to pop up (rise). 10-30 min. depending on how warm your stove top is. Bake for 15 min or until the parmesan has just begun to brown (don’t let it get too dark- burned parmesan is gross). Remove from the oven and pop one muffin out. If it is light gold on the bottom they are done. If not, return to the oven for another 5 min. and check again. I would not turn the oven temp past 375 or the parmesan will burn for sure.

Serve plain with fruit or salad on the side or you can serve with pizza sauce for dipping.
