Cornmeal Biscuits

These were surprisingly good! I had cornmeal on hand and found this in my “recipes to try” box. They are made just like traditional baking powder biscuits only they have cornmeal in them as well as flour.

The Recipe:

1 1/2 c. flour
2 1/2 tsp baking powder
1/2 tsp salt
1/2 c. cornmeal
1/2 c. margarine, butter, or shortening
2/3 c. milk or 3/4 -1 c. buttermilk

Combine dry ingredients. Cut in shortening till small crumbles the size of peas. Gently stir in milk just until moistened. Turn out onto lightly floured surface and shape into ball. Flatten ball until about 1/2″ thick. Use a glass or biscuit cutter to cut out 10-12 biscuits. Bake 450^ 12-15 min.
