Pumpkin Pudding

My recipe for pumpkin pudding really is not anything special but it’s worth mentioning because it’s a new take on something old. We love pumpkin pie at our house but I don’t have time or desire to make pie crust for a normal regular supper meal so instead I make pumpking pudding. It is sooooo simple!

The Recipe:
Buy a can of pumpkin that has the recipe on the side for pumpkin pie or use home canned pumpkin with your own pie recipe.

In a sauce pan place all the ingredients for the pie EXCEPT the eggs. Use a wisk to blend the pumpkin into the other ingredients and bring this to a low boil or hot simmer over medium heat. While this is heating up, place those eggs in a heat proof bowl and beat them up (leave no bruises though- lol). Once your saucepan ingredients are steaming good and nearly boiling, use a small coffee cup or similar thing to scoop some of the hot mixture into the beaten eggs. Wisk with a fork to combine and then repeat with a second scoop of the hot mixture. Then pour the egg mixture back into the saucepan and stirring constantly, bring all of it to a boil or until thickened. You must stir or it will stick and burn. Cool slightly and serve with a scoop of vanilla ice cream if you have it.

You can also make a crustless pie- Follow the recipe on the side of the can but pour the mixture into a well greased pie pan or casserole. Bake as directed but check for doneness after half of the recommended baking time for regular pie. It will bake faster with no crust.
