Peanut Butter Granola

We had a bunch of peanut butter and a bunch of oats on hand, so I messed around with a recipe I found until I came up with this version. Peanut Butter is an excellent source of protein and brain building fat (did you know fat is crucial for brain development??) and it is my breakfast protein of choice.

The Recipe:

4 Tbl butter or vegetable oil
2/3 c. peanut butter (any variety)
2/3 c. honey (in a pinch, use corn syrup)
1 tsp vanilla
1/4 tsp salt
6 c. oats (quick or old fashioned)
1 c. coconut or wheat germ or sesame seeds (optional)

Melt butter and peanut butter in a large sauce pan. Stir in the honey until smooth. Add the vanilla and salt and then incorporate your oats. Spread this onto a large cookie sheet and sprinkle your coconut on top, gently mixing it in a bit. Bake at 375^ for 10 min or so- stirring half way through. It is best to allow this to cool before eating. It gives the granola a time to “crunch up”. I prefer mine in a bowl with milk poured on it but some members of this family eat it dry with a glass of milk on the side! Enjoy!
