Chocolate Cherry Dessert

I don’t buy a lot of boxed cake mixes. To me, I can make a better cake from scratch in nearly the same amount of time. But, there are times when they come in really handy! One of my first cookbooks as a kid had a really simple recipe in it for a yummy dessert using canned fruit, cake mix, and butter. This is an adaptation of that first recipe.

The Recipe:

1 can cherry pie filling
1 1/2 c. plain yogurt
1/2 c. powdered sugar
1 (9×13 size) box chocolate cake mix
2 sticks butter/margarine (I use 1 of each)

Spread pie filling in the bottom of a 9×13 pan. In a separate bowl, mix together the yogurt and sugar (if you have vanilla yogurt, use it and omit the sugar). Then drop the yogurt mixture by the spoonful on top of the cherries- similarly to how you would combine the vanilla and chocolate batter in a marble cake. Next, sprinkle on the dry cake mix, breaking up any large clumps as you go. Then slice your sticks of butter into very thin slices so that you have enough to cover the whole cake. (Tips- if you slice it thin enough that you can cover the whole thing w/out using all of the 2 sticks, leave off the rest- it will be healthier. If you don’t have quite enough slices to cover the whole thing, just spread them out evenly and you’ll be fine). Bake this in a 350^ oven for 20-30 min. The butter will have soaked in and a crusty, slightly brown top will have formed and the cherries should be bubbling up around the outside edge of the pan. Serve hot or cold.
