Chicken and rice Casserole

This another simple casserole using leftover chicken and vegetables. You can use leftover rice as well- just omit the rice cooking steps and heat in microwave or in oven until heated through. Here you go:

The Recipe:

Broth
Chicken- cooked and diced
Rice – instant or regular
1 can cream soup undiluted
vegetable leftovers (example: corn, beans, peas, carrots, celery, onion)
shredded cheese
milk

Follow the directions on the rice package for the number of servings you need except replace the water called for with broth (for better flavor- if you don’t have any on hand, use water). Before you start to cook the rice, throw in an 1/8 of a cup of chicken for every 2 servings and a spoonful or so of veggies per serving. Follow the rice cooking instructions. When the time is up, stir in the cream soup, a handful of shredded cheese, and about 1/4 – 1/2 c. milk. Heat on low and stir until all is hot and creamy. You can also garnish with a little sprinkling of cheese.
